Zucchini
Zucchinis belong to the pumpkin family and were originally cultivated in America. It was only in modern times that zucchinis came to Europe and were then cultivated by the Italians. Even today, zucchinis are still one of the most popular vegetables there. Incidentally, the word "zucca" means pumpkin and this is where the name zucchini (small pumpkin) comes from.
Zucchinis are low in carbohydrates and calories, but they are rich in vitamin C and potassium, lower blood sugar levels and provide long-lasting satiety.
